Several years ago, I found myself a borderline diabetic, headed straight for medications.  At 285 pounds, I knew that I needed to lose weight.  I decided to have gastric-bypass surgery and was able to lose over 100 pounds.  My blood sugar was under control immediately and I was off my blood pressure medications in just a week.  I really credit this for a life-saving change in my life.  I have more energy, I exercise and finally feel "normal" for the first time in my life.
                            
The one thing that hasn't changed is my sweet tooth.  I can't really eat more than just a bite of typical high-sugar desserts.  So I have been on an experimental quest over the last couple of years to remake or redo some of those classic, wonderful, decadent desserts that we all love, in a version that I can enjoy, without getting sick.  I can't AND don't eat the kinds of quantities of desserts that I used to, but I can get that same satisfaction with a small and decadent dessert that has been reinvented.

As I said, I can't eat large quantities of these desserts and so they have to be shared...at work, potlucks, sent in care packages for my daughter and her friends away at college.  As people would simply try them, they couldn't really tell the difference.  Many times, I would tell people that it was sugar-free or low-sugar, and I often got the "oh" response and people would try cautiously.  Afterwards they would be in disbelief because "there is NO WAY that is sugar free!"  Many people seemed to want the recipes.  And so, I decided to create this blog and share my experiments with others who may have had surgery, or may just be trying to control their diabetes or watch their sugar intake.

A few of my recipes are originals, but mostly I get recipes from all over.  Some are old family recipes, some come from Facebook or Pinterest pins, some are just ideas I get from talking to friends and acquaintances.  As my experiments have taken place, I have to be truthful and say that I have not been doing a very good job of documenting where these recipes come from.  I hadn't really thought about this blog and needing to share the link.  It is not my intention to use/modify recipes without giving credit and I will do so for all those that I can remember or relocate.  If I have modified a recipe that is yours and did not give you credit, please simply let me know and I will link back to you immediately.  Please know that my intentions are simply to share great food with others.

Now I will be honest right from the beginning...these are not necessarily low-calorie desserts.  My focus is on the reduction or elimination of sugar.  Some recipes also turn out to be low calorie, or low fat, and that is a fantastic bonus, but if that is what you are looking for, please be sure to read the ingredient list and use your common sense.
